Slimming World Friendly ‘KFC Style’ Chicken

I fancied something a bit different for dinner on Saturday night – something which was Slimming World friendly but also ‘comfort food’.

Then I remembered I had a jar of chicken Bovril in the cupboard that I had brought from group, so I decided to match the KFC Style chicken I have seen recipes for around the internet.

I used chicken breasts and cut them into strips. Then boiled them in chicken stock for about 15 mins.

Whilst they were boiling I mixed some chicken bovril with 1 egg and a variety of herbs and spices I had in the cupboard, and blended up some (Wholemeal) breadcrumbs.

Once the chicken strips were done I dipped them in the bovril mix and then into the breadcrumbs.

This bit was very messy and I couldn’t get them to cover completely so they kind of had breadcrumb clumps on them. But it didn’t matter.
After dipping and coating each one place them on a baking tray which has been sprayed with Fry Light and shove them in the oven until lovely and brown and crispy. I think I had my oven (fan) on about 180.

I served mine with Slimming World chips (slightly boiled then baked on a tray with fry light) – and although it wasn’t exactly like having a KFC…It was pretty darn tasty!

    Even though the covering didn’t stay on, they still look tasty!
    KFC is about the only fast food takeaway we go to (mmm….Tower Burger) but a lower calorie version would be better. Your recipe does sound interesting – I will have to give it a go myself at some point! :-) x

      Yes definitely try it – you may be able to make the coating stay on properly!

    Use smash egg piri piri seasoning and bit of chilli. Syn free
