It’s a Pancake, but not as we know it!

While browsing the internet and looking through blogs I came across something rather interesting. A 2 ingredient pancake, which is nice and healthy. Unfortunately, I can’t actually remember where I read about it, but a quick google shows that there are many posts and articles about them!

I am always trying to be healthy – as you may know if you have read any of my Slimming World posts – but I love a good snack, (which is sometimes quite and issue!) so something like pancakes would be perfect as they are sweet but ‘real’ food.

So ‘what are the 2 ingredients?’ I hear you ask, well its simple. 2 Eggs and a Banana.

A trial was a must so we made some on Sunday, here is the process:

In bowl number one mash up a Banana and in bowl number two whisk 2 eggs.

Then mix them together to form your batter.

Get a frying pan nice and hot and add some oil. For extra healthiness I use the Fry Light 1 cal spray. Then fry as you would any other pancake. We found the mix did 3 small thick pancakes.

Now does this fit in with Slimming World? Well, although both Eggs and Bananas are free foods, if you change the form of fruit and cook it, then it is no longer free and you need to syn it. From looking in my book a Banana which is pureed and cooked is 5 syns. So although these pancakes are nice and healthy they are going to cost you 5 syns…but they are so sweet and lovely I don’t mind using my syns on them!

As you can see we served ours with some yummy Strawberries and Raspberries and you could have yoghurt with them too!

      Yes definitely give it a go, it’s great for a quick but not boring breakfast or desert!

      I’m not a fancy of Bananas usually either, but these don’t taste really over the top Banana like! :)

      Did it today for the first time. Really really simple! And my anti diet husband liked it too! Mash the banana, add some canderel, beat the eggs (I used a fork)and then mix them in. It looks sloppy but don’t worry. Little oil or fry light in the pan and pour in a big spoonful. Wait a minute or two, turn it over just for half a minute. Done! I tried it with a little oat bran next time. I prefer it, but it adds a syn for each table spoon. So thank you Sarah!
